Under the direction of chef José Guadalupe —born in Popolá (Yucatán) and leading the restaurant since 2024 after more than 8 years of experience within the house—, the cuisine takes on a personal and contemporary dimension. A defender of culinary roots and Mayan culture, his identity is reflected in a proposal that creates a dialogue between his heritage and the pantry of the Ebro Delta. The result is a cuisine with character, sensitivity and coherence, designed to offer a unique gastronomic experience in Barcelona.
